‘Tis the season for game and you see signs reading “La chasse est arrive” everywhere in Switzerland. We were lucky to be treated to one fine chasse dinner by Alice Abalos, a good friend of ours stationed in Geneva. We went to Auberge de Coutance on 25, Rue de Coutance. I had already had some chasse (rabbit) for lunch at a hole in the wall in Geneva’s best covered market, Les Halles de Rive, which sells fresh fish, meat and charcuterie, fruit, cheeses, wines, specialties from Iran, Lebanon, Egypt, and lots of other goodies. It’s actually a great place for foodies to visit. Check out their website. I bought a box of Vacherin Mont d’Or cheese from the Ph. Muller fromagerie and they
vacuum-packed it for me.
I decided to continue with game fare for dinner. This time, I had chamoix, (which I guess is part of the deer family, judging from the picture), after a nice foie gras salad. The chamoix was cooked in a red wine sauce and served with
black figs, foie gras, tiny chestnuts and greens.
I can’t recall exactly what Marita had; I think it was selle de chevreuil, or saddle of venison. Dessert was fig ice cream with fresh figs. A memorable meal.
We’ll enjoy the Vacherin Mont d’Or cheese and memories of Geneva this Thanksgiving.
