My son Jay brought us tonight to Cubby’s BBQ in Hackensack, NJ. I haven’t had good pulled pork in a long time (the last time was in Georgia). So I ordered a pulled pork sandwich and Jay and Marita shared a whole rack of baby back ribs. For sides, we had sweet potato fries, coleslaw and mashed potatoes.
The ribs were really tender, fall-off-the-bone good. We didn’t even have to gnaw on them; at the end of the meal, we had clean white bones on clean plates.
Cubby’s website says they’ve been around for 26 years. I’m guessing from the large painting of the Vietnam Memorial Wall on one of the walls that it was founded by Vietnam vets. Marita and I have never noticed it. We’re certainly glad Jay pointed it out.
