Eric Ripert of Le Bernardin is my favorite chef. Marita and I ate at his restaurant a few years ago. I still remember what I had for my main dish – skate wing. When it arrived on our table, it was almost completely unadorned – no fancy veggies or sauce scribbles on the plate. Just the white skate on a white plate and a small bowl of veggies and sauce on the side. I thought at first that the staff had forgotten to add the final touches. When I had my first bite, I realized that the very spare presentation was actually an expression of confidence. No need for dressing up the plate. This fish dish was perfect.
Ripert has a website with videos of him cooking what seem like simple but delicious dishes. I have to try the dish shown in the video below – mission figs wrapped in bacon.
