It’s been an excellent week for desserts. Marita and I were invited to lunch by our good friend Marilyn and I was looking forward to having another taste of her pistachio pound cake, which is the best I’ve ever had (although I only had a few leftover pieces that Marita once brought home from work).
I was also looking forward to what Claude, another invitee, was going to bring. His mom is originally from Brittany, in the northern part of France, and is an excellent chef. He brought French apple tart that his mom baked that morning. We’ve always loved the country pate of Claude’s dad, another great chef, who passed away just a way a few years ago, and only lately tried his mom’s cooking. This dear woman goes to market everyday and cooks meals from scratch, much like her ancestors in France. His father used to get fresh French baguettes everyday. This Claude is one lucky man!
Needless to say, both the pistachio cake and the apple tart were outstanding. The cake had that lovely pistachio green color with a slightly crispy crust, and the rich, buttery French apple tart had those crisp corners that everyone fights over. We brought home some pieces of the cake and tart, and as can be expected, they’re all gone.
